Mojo Record Bar, Sydney’s favourite music and bar came alive with the sounds of live cajón drums for the Rum and Drums night presented by the Sydney Rum Club and Flor de Caña rum.

Introduced by Tom Bulmer and presented by James France of Vanguard Luxury Brands, the meeting was an introduction to the Nicaraguan rum including a tasting of the different age expressions.

Flor de Caña comes from Nicaragua in Central America, a highly volcanic country which makes the soil fertile and sugar cane grows in abundance. Not being a Caribbean rum, it ages a little slower and is often labelled as “slow-ageing rum”.
The molasses rum is column distilled and has 40% ABV. Ex Jack Daniels refill bourbon casks are used for maturation and the barrels are stood on end to slow down the evaporation process. The rum is characterised by its smoothness with sweet, young coconut and vanilla notes.
Flor de Caña punch
Flor de Caña 4 yo is a white rum that is aged for four years which makes it the oldest white rum the world. It has notes of tropical fruit and young coconut flavour. It can be a sipping rum but is manily used in cocktails and mixed drinks.
Flor de Caña 4 yo Gold has a medium-bodied palate with more vanilla, sugar and butter notes. Flor de Caña 7 yo is referred to as the champion of the portfolio. This is the rum that most people in Nicaragua drink. It mixes well but is best sipped straight. The rum has notes of coffee and dark chocolate with burnt toffee on the nose.

With the Flor de Caña 12 yo, the rum gets progressively sweeter, with less alcohol bite. Very smooth, it’s arum to be sipped with after a meal or with dessert. Flor de Caña 18 yo exhibits spice with a lot of wood notes from spending too much time in oak. At 18 years in oak, it begins to lose its rum characteristics and flavours, and it remains an acquired taste.

The Rum Club meeting ended with a drumming session led by Claudia Chambers using box shaped cajón drums which originate from Peru.
