Zeta Bar: The Secret Garden

Zeta Bar in the Hilton Hotel is about to be transformed into The Secret Garden, a Friday night concept that celebrates garden parties with a touch of the whimsical.

The outdoor area of the internationally acclaimed bar will become a garden setting with a hedge-lined terrace, a topiary and cheeky gnomes creating a fantasy scene that is perfect for sipping on creative cocktails while listening to Sydney jazz band, The Press Club.

The cocktail list is a playful interpretation of the garden party theme, with drinks incorporating a perfect balance of Moët & Chandon with fruits and spirits meticulously chosen to enhance the notes of the wine. Head Bartender Colin Tam and members of the Zeta Bar team have each created a cocktail inspired by their childhoods and interpretations of The Secret Garden book.

Choose from the selection of sparkling icy poles and jellies such as the Mimosa Ice Pole ($8) made with champagne and fresh orange juice, or the delectable Kir Royal Jelly ($6), a mixture of champagne and Crème de Cassis jelly topped with a champagne emulsion.

The drinks combine Zeta Bar’s renowned molecular mixology and classic cocktail techniques. Be enchanted by the Secret Garden cocktail ($18) by Sarah Jane Clare with herbaceous and floral flavours of leatherwood honey and rhubarb to complement the Champagne, topped with a whimsical strand of pistachio fairy floss.

The Tweedle Dum cocktail by Chad Choulai ($30 for two) celebrates the flavours of fresh strawberries, basil and limoncello with the addition of gin and Chandon sparkling. The drink is served punch style for two in a smoking tea pot. The Applicious Air ($18) by Colin Tam is refreshing and easy to sip with sweet apples and fresh lemon sorbet, mixed with a dry apple cider and topped up with Chandon sparkling.

For something that delivers a little more alcoholic kick, the Garden Berry Smash ($18) by Patrick “Swanny” Kanongataa is a play on the classic mint julep made with Maker’s Mark bourbon with a refreshing mix of summer berries and pineapples and a blossom mist to excite the senses.

Zeta Bar will also serve a Mistress Mary Afternoon Tea that’s quite contrary ($45 pp or $55 pp with a glass of 2009 Chandon Brut) with a selection of tasty and elegant bites created by Executive Chef Carl Middleton. Crab, cucumber and watercress finger sandwiches and house-smoked salmon, rocket and cream cheese on homemade brioche make up the savoury bites, while an assortment of macarons, raspberry mousse with chocolate and pistachio, chamomile crèmeux with fried basil and home-baked scones served with rose petal cream deliver a sweet hit.

To add elegance to the occasion, Sydney fashion blogger Sneakypeek will select the most fashionable lady on the night who will win prizes from event partner Moët & Chandon. So ladies, put on your best frocks and heels, and gentlemen, don your stylish suits. This is going to be one garden party to remember.

The Secret Garden at Zeta Bar launches on Valentine’s Day, Thursday 14 February 2013 and continues every Friday night from 15 February until March 2013.
