Reece Griffiths

Bar Manager Reece Griffiths has created a number of cocktails with a focus on pineapple and shrubs evoking the spirit of summer holidays and long hot nights. The concept is to make drinks that are complex, unusual and easy to serve with all the effort in the preparation. A maximum of four ingredients are used, mainly in equal parts.

The venue has a focus on sustainability, Reece explains.Everything is juiced fresh and scraps are resued. The pineapple skins and orange zests go into the Painkiller Soda, the poached strawberries from that soda infuse the mezcal and the mango for the liqueur is smoked and blended for another drink hence creating minimum waste.

GP Spritz

Start with the easy-drinking and GP Spritz, a mix of fino sherry, BBQ’d pineapple syrup topped with sparkling wine. It’s light and fresh, and you can find yourself easily slipping into another.

The 302 Painkiller made with Havana Club 3yo rum, citrus, house-made painkiller soda and mint is as fresh as a dip in the ocean while the Caribbean Calling with Beefeater gin, BBQ’d pineapple syrup, fino sherry, citrus and celery shrub makes for elegant sipping.
