What to Do with Leftover Turkey

You’ve prepped, basted, roasted, carved and ate as much of the Christmas turkey to your heart’s desire. You’ve divided food amongst the family yet you stare at the bird pondering what to do with leftover turkey.

1. Turkey Stir Fry
Slice the cooked turkey into small long pieces and stir fry with ginger, garlic, shallots, carrots, broccoli and soy sauce. Serve with steamed rice.

2. Turkey Pasta Bake
Cut the cooked turkey into small pieces and make a turkey pasta bake using orechiette, peas, mushrooms in béchamel sauce topped with cheese. Dust with breadcrumbs and brown under a grill. Serve with a green leafy salad.

3. Turkey Jaffles
Go with the latest trends in pubs and bars and put that jaffle maker to use by making a turkey jaffle with grain mustard.

4. Toasted Turkey Sandwich
You don’t own a jaffle maker? Slice the cooked turkey into thin pieces, add avocado, lettuce and a good dollop of spicy chipotle mayonnaise between two slices of toasted bread.

5. Thai Turkey Salad
Brighten up cold turkey pieces with Thai flavours. Prepare a a Thai salad using Thai basil, coriander, mint, red chilli, shallots and top with a dressing made of fish sauce, lime juice, grated ginger and brown sugar. Sprinkle with roasted rice if you wish.

6. Turkey Wrap Burrito
For something more substantial, make a turkey wrap burrito. Use shredded cooked turkey, thinly-sliced Spanish onion, tomatoes, red kidney beans, coriander, smoked paprika and mix with a dollop of sour cream.

7. Turkey Pasta Salad
Cook some spiral pasta. Add halved cherry tomatoes, basil, thinly-sliced onion, cooked turkey pieces, a little lemon juice, black pepper and mix. Add crumbled goats cheese on top if you wish.

8. Turkey Rice Paper Rolls
Roll your own rice paper rolls with cooked vermicelli rice noodles, matchsticks carrot, shredded cooked turkey and Thai basil then dip into sweet chilli sauce.

9. Thai Curry Turkey
Make your favourite green or red Thai curry using cooked turkey meat cut in small pieces, onion, capsicum, snow peas,  in light coconut milk. Serve with jasmine rice.

10. Turkey and Vegetable Pie
Using puff pastry, prepare a turkey vegetable pie with small pieces of cooked turkey, peas, carrots, leeks in a white sauce flavoured with Dijon mustard and bake in the oven until the pastry is golden. You can also use left over ham if you wish.
