Royal Botanic Gardens’ Tomato Festival Cocktails

The Royal Botanic Gardens’ inaugural Tomato Festival kicked off on the weekend with a cocktail challenge, a collaboration with Grow it Local and Trolley’d.

Green Gazpacho and Vodka Cocktail

Home-grown tomatoes, herbs and botanicals sourced from various Sydney gardens – including the Royal Botanic Gardens’ own – were used by Trolley’d mixologists to create three tomato-based cocktails to launch the festival.

A vodka-infused green gazpacho cocktail was served on arrival, a savoury blend infused with lemon, pepper and a mint from the gardens with a fresh, strong bite.

Tomato Water, Honey and Gin Cocktail

What followed was an elegant and sweet gin-based drink made with tomato water, coriander seeds, and the Royal Botanical Garden’s own honey.

Smashed Tomato & Tequila Cocktail

The last drink was the favourite with its savoury and spicy character. Smashed tomato was mixed with agave nectar, pimento de padron, cucumber and tequila garnished with peppers and dehydrated cherry tomatoes.

The Tomato Festival ran from 1-2 February in the Royal Botanic Gardens with a range of free and ticketed events, including a sold-out tomato-inspired luncheon at the Botanic Gardens Restaurant.
