Pop-up art, vibrant Thai food and fresh juice-based cocktails came together under the one roof for the launch of Work In Progress, Merivale’s new bar in Sydney’s CBD.

Opening to the public on Thursday 1 May, the art-based pop-up is curated by Glenn Barkley, former Senior Curator at the Museum of Contemporary Art, and features the colorful work of Darwin-based pop artist, Franck Gohier.

The eclectic venue serves traditional Thai food by chef Air Jantrakool (ex Sailors Thai Canteen). Think Betel Leaf Wraps ($4.50 each) with smoked trout, fresh ginger, lime, peanut and caramelised roasted coconut, Stir Fried Sator Beans ($22) and Southern Curry of Barramundi with bamboo and Thai Basil ($20). The dishes are light with bright, fresh and zingy flavours.

A rotating cocktail list is devised by Merivale’s Group Bars Manager, Paul Mant, with Head Bartender, Peter Ehemann (ex Hemmesphere). The cocktails ($18 each) are easy-drinking and fresh juice-based such as Down The Stairs with Zubrowska and Almond with fresh lemon and pressed green apple and the Pomelo Fizz, with Avion Tequila, Aperol and fresh grapefruit, passion fruit and lemon topped with soda.

A concise selection of wine is on offer, all available by the glass and by the bottle, starting at $8, and spanning various regions of Australia, Italy, France and New Zealand.

With its chilled vibe and pop art installation right down to the aproned staff, the King Street venue brings good times with a sense of nostalgia to the CBD through the spread of comic books and pulp advertising.

Work In Progress opens on Thursday May 1, 2014.
