Tapastry, ECQ Bar, Pullman Quay Grand Sydney

Art and food collided at the launch of Tapastry last week at the ECQ Bar of the Pullman Quay Grand Sydney, Accor’s 5 star hotel.

Renowned restaurateur and one of Australia’s most celebrated chefs, Justin North has officially launched Tapastry, the first in a series around Australia. North is the Culinary Ambassador for Australia’s largest 5-Star hotel group.

Ten dishes that use Australia’s best produce from each region have been created by North, while each of the Pullman Hotels’ Executive Chefs have created authentic culinary experiences using ingredients sourced from local artisans and food producers.

Tapastry is a celebration of Australian cuisines, with each unique dish to be shared and experienced. Each plate is a small, colourful work of art that comes together to create the perfect experience for all the senses, similar to the beauty of a tapestry.

Beautifully arranged live elements of the ten dishes were showcased individually under a glass cloche along with the recommended wine pairing. It was an alluring display and truly a work of art complimenting the boutique luxury hotel’s breathtaking views of the Sydney Harbour.

The Tapastry menu offers specials and recommended wine (W), cocktail (C) and beer (B) pairings. These include Shark bay ebi prawn cocktail ($16) with (W) 2012 Cullen “Morgan Vineyard” Semillon Margaret River WA ($13), (C) Ketel One Firefly ($18) and (B) Birra Moretti ($9). Specials include 1/2 shell Harvey Bay Scallops, black pudding, café de Paris ($14), Torched salmon, Asian herb salad, wasabi and Yuzu dressing ($18) and Pulled beef brisket, pickled daikon and mushrooms, XO sauce ($17).

Tapastry by Justin North is available in all Pullman Hotels in New South Wales, Victoria, Queensland, Western Australia and in Sails in the Desert in Northern Territory.
