Following on from the lavish launch of the Diageo Whisky Club, The Singleton Spey Cascade, a new expression from the Singleton single malt launched in Sydney at a sensory event held at The Grounds in Alexandria.

The Singleton Spey Cascade
The Singleton Spey Cascade is a no age statement single malt aimed to inspire a new generation of whisky drinkers. The spirit is aged in European sherry and American bourbon oak that impart notes of stewed fruit, brown sugar and toasted nuts.
Cocktails
Two delicious cocktails were served on arrival, each crafted to highlight elements of the whisky.
Speyside Lemonade
The Speyside Lemonade was a refreshing mix of Singleton Spey Cascade with lemon barley syrup charged with sparkling water.
Berry & Sherry
Berry & Sherry was a heady mix of Singleton Spey Cascade stirred down with Cocchi di Torino, Marque De Poley Cream Sherry and a dash of Creole Bitters, a drink that showcases the more serious flavour profiles of the spirit.
Sean Baxter
After a brief introduction by National Brand Ambassador, Sean Baxter, guests were off on a sensory exploration journey across three stations.
The Woodland Sour Bar
The Woodland Sour Bar
Stepping through to the Woodland Sour Bar, basket in hand, guests foraged for their favourite ingredients to create a bespoke cocktail.
Choose Your Sweetner
Step 1 was to choose one sweetner ingredient from a display that included honey, ginger, berries and herbs.
Pick Your Fruit
Step 2 was to select one from the woodland fruit containing figs, apricots, grapes and assorted nuts.
Choose a Citrus
Next came the choice of citrus with oranges, limes, lemons and mandarins.
Bespoke Singleton Spey Cascade Sour
The basket of produce was then handed over to the bartender to create the bespoke Singleton Sour cocktail finished with an aromatic spray.

Sensorium
The next station was the Singleton Spey Casdace Sensorium located at the Lock In bar inside the Grounds.
Sean Baxter at the Sensorium
Sean Baxter Ambassador took intimate groups on a sensory journey exploring the aromas and flavours of the Singleton Spey Cascade. Stone fruit, marmalade, subtle honey sweetness give the whisky a burst of fruit flavours with a medium length finish that sits at the front of the palate. Highlands Tearoom
Highlands Tea Room
The third station was the Highlands Tea Room for a high tea with a difference.
Tea Room Hostess
After guests were seated by the properly attired Tea Room Hostess, complete with half eye reading glasses, it was down to serious whisky business.
Strathspey Tea Time
Strathspey Tea Time was served, a delightful mix of Singleton Spey Cascade with honey tea syrup, grapefruit bitters, creole bitters served in a frozen tea cup and accompanied by a Drummock Scottish tea cake.
A Bonnie wee Bounty
A Bonnie wee Bounty combined Singleton Spey Cascade with cold drip coffee and dark chocolate liqueur,
Nitro Frozen Coconut Cream
finished with nitro frozen coconut cream and a chocolate wafer straw.
High Tea
High Tea was presented in the tradition three tier stand with homemade buttermilk scones, raspberry jam and clotted cream, mini profiteroles with toffee and creme patissiere, mini salted caramel and chocolate tartlets, mini lemon meringue starlets, strawberry and vanilla macarons.
For those who did not wish to partake in High Tea, a selection of desserts included Seasonal Berry Pavlova, Callebaut Dark Chocolate Brownie, and Spiced Cinnamon Poached Pear.
With the sensory journey complete, guests were left to mingle in good company and enjoy more of the cocktails on offer throughout the evening.
