The Morrison Oyster Festival 2016

The Morrison Oyster Festival is back for the fourth year at The Morrison Bar and Oyster Room in Sydney’s CBD. Throughout the month of August, oyster lovers can enjoy a large selection of oysters with rock and pacific varieties showcased from around the Australian coastline.

Executive Chef and Co-Owner Sean Connolly is offering an array of activities with unique menu items and offers. Here’s what’s on from Monday 1st August to Wednesday 31st August 2016.

  • ‘Oyster Hour’ – Presented by Piper Heidsieck, this Morrison favourite will be on every day, with oysters going for $1 each between 6pm and 7pm.
  • Shucksational Beverages – Champagne offers from Piper Heidsieck including bottles for $99 throughout the month as well as Oyster Shooters, perfectly paired wines, cocktails and beer specials to boot. Lagavulin will also be launching its highly anticipated 8-year-old Whisky, to celebrate the brand’s 200th anniversary as well mixing up its signature Penicillin Cocktail with fresh notes of lemon, honey and ginger.
  • Whiskey and Oyster Masterclass hosted by former MasterChef contestant Sean Baxter on Tuesday, 9th of August.
  • Champagne and Oyster Masterclass – “Pop, Shuck, Fizz”, presented by Ned Goodwin MW (Master of Wine) on Tuesday 23rd of August.
  • Oyster Menu by Executive Chef Sean Connolly which includes:
    • The Carpet Bag Steak – Oyster Stuffed Beef Tenderloin, Prosciutto, Greens, Café De Paris Sauce
    • Chowder and Fries – Creamy Leek and Oyster Soup served with The Morrison’s famous Duck Fat Chips
    • Chicken Fried Oyster Tacos – Served ‘naked’ with Slaw and Chipotle Aioli
    • Cheeky Beef and Oyster Pot Pie – Slow Cooked Beef Cheek, Oysters, Barley and Ale Gravy
    • Pork Schnitzel and Oyster Mayo Sandwich – Pork Loin, Demi Brioche Bun, House Pickles, Oyster Mayo
    • Oyster Rockefeller – New Orleans White Gruyere Sauce, Greens and Chorizo

This year, The Morrison has collaborated with the Whitehouse Institute of Design Australia with past and present students of the design college will be creating a series of sustainable pieces inspired by the humble oyster. Diners will be able to vote for their favourite works, whilst going into a draw to win a stunning Linneys 18ct white gold neoprene pearl bangle featuring an Australian South Sea pearl.
