The Gilt Lounge @ QT Sydney Seasonal Cocktail Menu

The Gilt Lounge at QT Sydney has released a line up of new cocktails in the lead up to warmer temperatures. The new cocktail menu includes  twists on classics along with vintage tipples and signature libations.

The Gilt Lounge is located on on the second level of Gowings Bar & Grill at QT Sydney. Enter the hotel via Market Street where you will be welcomed by the hostess then take the lift to the first floor and the stairs up one level. You’ll find modern and sleek bar bathed with moody lighting and dotted with bespoke furniture including an inviting lounge space ideal for intimate dates and small groups.

The Natural Hispster

From the new cocktail menu, The Natural Hipster ($20) gives a nod to Bondi and combines ingredients that make you feel good about imbibing a spirit thanks to spirulina’s herbaceous punch. The cocktail is in essence a take on the Margarita where tequila is infused with earl grey tea then mixed with melon liqueur, aloe vera juice, lime juice, agave syrup and spirulina – almost a breakfast juice and too good for you to be a cocktail. It’s green and bright, herbal and vegetal with the tequila and agave notes taking a back seat to the tea and spirulina. It’s an afternoon style of cocktail to get you started and very easy to drink,

The Gilligan

The Gilligan ($45 serves 2) brings an element of theatre to the table. The cocktail is designed for two persons and comes in a beautiful copper pineapple served on dry ice. Vodka infused pineapple meets spiced rum, absinthe, lemon juice, pineapple vinegar falernum and frosty a fruit reduction with pineapple lump smoke. The aromatics alone will seduce let alone a cocktail that perfectly balances sweetness and spice and makes one well worth ordering not just for the theatrics.

Weis Daiquiri

The Weis Daiquiri ($20) gives a nod to Australiana with gold rum, macadamia syrup and oil with melted Weis mango sorbet. A crowd pleaser, it’s sweet and delicious, like having a boozy dessert in a glass.

Oaked QT Old Fashioned

If you like your cocktails more spirit-forward, the Oaked QT Old Fashioned ($20) is well worth saving till the end. While many bars have barrel aged cocktails, this version aged in French oak barrels for 8 weeks is one of the favourites and blends the flavours of the drink with soft oak in perfect harmony.

If you haven’t been to The Gilt Lounge at QT Sydney yet, a sophisticated and welcoming experience awaits.  The Gilt Lounge is until 2am Wednesday to Saturday.
