Zeta Bar New Cocktail Menu

Zeta Bar in Sydney’s Hilton Hotel has launched a new cocktail menu in time for the spring season. The cocktail list follows Hilton Hotels around the world and focuses on the hotel’s history paying homage to cocktails invented at key Hilton locations.

The Hilton Chronicles is divided into four sections, each showcasing a hotel in time. These include the Mobley Hotel in Cisco, Texas , The Waldrof Astoria, described as smooth and spiced with Asian influences, the Hilton Caribe where the Pina Colada was born, and Hilton Kuala Lumpur with drinks such an interpretation on the Zombie.

Boracay Zombie

From the Hilton Kuala Lumpur, the Boracay Zombie ($24) makes use of Zeta Rum Blend, pineapple & kale, chai honey, kalamansi, ginger beer and absinthe in a fruity and refreshing drink to start the evening.

Martinique Smash

From the Hilton Caribe, the Martinique Smash ($22) combines Bulleit Bourbon with Agricole Rum, cinnamon and grapefruit mix,
seasonal herbs, citrus and aromatics.

Bartender Flavio Tripepi

If there’s one drink that is set to be the most instagrammed of the list, it’s the Coconut Grenade, prepared by bartender Flavio Tripepi.

Coconut Grenade

A twist on Pina Colada, the Coconut Grenade ($25) combines banana rum, coconut honey cream, velvet falernum, citrus and aromatics and comes served in half a coconut shell with liquid nitrogen providing the theatrics. Aesthetics aside, this drink beautifully balances rum with fruit and spice, just what you need to start planning that tropical holiday you’ve been dreaming of.

Zeta Bar is open from Tuesday to Saturday from 5pm to late.
