Once again we reflect on the incredible talent that abounds in our bars, bartenders and their passion to make an experience in each and every cocktail which brings us to our Top Cocktails of 2016.

For each, we name the cocktail and its ingredients, the bar and and where known, the bartender who created it or prepared it.

Here are our Top 12 Cocktails ofr 2016 presented in no particular order.

Oversea Lover (Encanto Pisco, Noilly Prat, Peychaud’s Bitters, mist of vanilla, chamomile, orange blossom, rose and cedarwood, garnish chamomile flowers) at Maybe Frank created and prepared by Andrea Gualdi.

3.  Stockholm Syndrome at PS40

PS40, Sydney

Stockholm Syndrome (Cumin and Dill Ketel 1 Vodka, Aquavit, lemon, pink Himalayan salt, pepper) at PS40 prepared by Julius Yates.

4. Trinidad Sour at Jangling Jack’s

5. Dante Sour at The Long Goodbye

The Long Goodbye Darlinghurst

Dante Sour (Rye Whiskey, house-made black sesame infused honey, house-made ginger liqueur, lemon juice,egg white) at The Long Goodbye prepared by Flynn McLennan.

6. Grey Goose Umami Cocktail

Grey Goose Martini (40 ml Grey Goose Vodka, 60 ml tomato water, French vermouth, 2 dashes lemon juice, 2 dashes wakame seaweed oil, 2 dashed Tabasco) garnished with a pickle, seaweed and fermented garlic at Automata created by Head Chef Clayton Wells.

7. Scotch, Redwood Bark, Stone Wash at Charlie Parker’s

Scotch, Redwood Bark, Stone Wash (Talisker Whisky, Dom Benedictine, spray infusion of moss and riverbank, garnish –  schist and redwood bark) at Charlie Parker’s prepared by the Charlie Parker’s team.

8. Caracas at Grain Bar

Seeds in Spring (Shiraz Barrel Aged Gin with wattleseed, native pepperberry, organic barley, malt, lime) at O Bar & Dining prepared by the bar team.

11. Marcello at Palmer & Co

Palmer & Co Summer Cocktails

Marcello (Altos Reposado Tequila, Punt e Mes Vermouth, Manzanilla Sherry, cedarwood and orange bitters, eucalyptus leaf) at Palmer & Co created and prepared by Mario La Pietra.

12. La Cereza Ahumado at Darlo Country Club

Darlo Country Club

La Cereza Ahumado  or ‘The Smokey Cherry’ (Mezcal Amores, Cherry Heering, pink grapefruit, cherry, balsamic, rose petals) at Darlo Country Club prepared by the bar team.
