Three Bottle Man at Bulletin Place is a new venue that takes its Australian focus seriously. The café by morning, restaurant by lunchtime and bar by night is currently the only Sydney venue to stock all Australian beverages and produce.

Spilling out on to Bulletin Place, Three Bottle Man offers an al fresco laneway experience in a chilled and welcoming vibe that takes you to Europe and back.

The All-Australian bar is named after the late-18th century British Prime Minister, William Pitt dubbed the Three Bottle Man, known for carrying with him three bottles of liquor at all times.

The concept is built around the number three. “Everything is in 3s,” Kartik Chaudhri, Bar Supervisor explains. “We have 3 gins, 3 whiskies, 3 rums, 3 vodkas, 3 styles of beer, cider and wines which change on a monthly basis.”

You won’t find a printed cocktail list. Bartenders come up with their own three creations for the week using Australian spirits from all parts of the country. Syrups are house-made, fresh juices are used and house infusions inject original flavours into the raw ingredients.

The Rising Sun

The Rising Sun is a tall, refreshing aperitif style of drink made with Poor Toms Gin, lemon juice, house-made berries syrup, apple juice and vanilla syrup. It’s easy drinking and highlights the strawberry notes of the gin.

Fig Passion

Fig Passion combines Starward Whisky Wine Cask with muddled figs, maple syrup and lemon juice, shaken and served with a fig garnish. The sour style drink is beautifully balanced, allowing the whisky notes to come to the fore along with the wintry fig flavours and the sweetness of the syrups.

Bonsai

Bonsai is a dessert style cocktail with Bundaberg Small Batch Rum, Matcha Tea, Cream and Butterscotch Syrup. It’s dessert in a glass with sweetness upfront and a lingering butterscotch note on the finish.

All cocktails are priced at $20 and the bartenders can make classics if you’re so inclined.

Pata Negra Iberico Ham

The dinner menu is based on light snacks and share plates such as the Pata Negra Iberico ham ($16), shaved and served at room temperature to allow the full nutty flavours to develop. Other popular choices include a charcuterie board ($18) and an artisan cheese board ($18).

Duck Leg Confit

For something a little more substantial, the Duck Leg Confit with Waffles and Maple Syrup ($18) is as described, a combination of salty and sweet flavours that work well together.

There’s so much to like and appreciate about Three Bottle Man. The all-Australian concept is to be admired as is educating guests about the diversity of Australian spirits and the creative talents of our Australian distillers.

Three Bottle Man is open daily and is part of Sydney Harbour Marriott’s $15 million transformation aimed to delivering a brand new food and beverage concept for the hotel.
