Since we first featured Carbon Mexican in Bondi, Brett Harris, Venue Manager at Carbon and sister restaurant Taqiza has released a brand new and playful cocktail list.
Brett Harris, Venue Manager
With a solid focus on 100% agave tequila and fine quality mezcal, the new Carbon cocktail list pays respect to the agave spirits with balanced flavours and a good of measure of fun thrown in.
Jalapeno Margarita
The House Classics on the Carbon cocktail list include three Margaritas. Our pick is the Jalapeno Margarita which comes with a tequila or mezcal option ($19/$20). It’s a refreshing combination of blanco tequila, fresh jalapeno, lime and Jalapeno sherbet, lime juice and agave nectar. The heat from the tajin and salt rim combined with the fruitiness and heat from the jalapeno makes for delicious and easy sipping.
Guero’s Kick-Back
Tiki meets Agave in Guero’s Kick-Back ($20), a luscious, sweet and smoky combination of blanco tequila, mezcal, lemon juice, orgeat, Angostura bitters, and Tempus Fugit Banana Liqueur, the latter adding viscosity to the drink and an outstanding banana cake note. There’s a hint of nuttiness from the orgeat, and the mouthfeel make it a pleasure to sip.
Colada de Plantano
Another Tiki hybrid drink is the Colada de Plantano ($19) with mezcal, banana liqueur, Coco Lopez, pineapple juice, agave nectar, lime juice and bitters. A pinch of tajin salt highlights the coconut notes in this creamy, tropical milkshake with a kiss of smoke.
Berocca-Loma
Who says tequila gives you a hangover? With the Berocca-Loma ($19), it’s just what the doctor ordered. The drink is a take on the Paloma cocktail with reposado tequila, grapefruit, lime juice and 1/4 tablet of Berry Berocca. The glass is sprayed with a salt and vinegar saline spray which highlights the grapefruit and berry notes when sipped. It’s fun, fresh, a little unusual and a fine example of good drinks made fun. Smoke, Sour & Sweeeeet
If you’re after a classy sipper, the Smoke, Sour & Sweeeeet ($19) hits the right spot with a perfectly balanced mix of mezcal, blanco tequila, agave nectar, Suze, magic solution and saline spray on the glass. There are a lot of flavours at play which make it one to sit back on and savour.
Café De Maguey
If you’re hankering for an Espresso Martini, Carbon offers a most impressive alternative. Café De Maguey ($20) combines tequila, mezcal, coffee porter reduction, house-made coffee bean syrup and agave nectar. What makes this drink unique is the spectrum of flavours starting with the agave notes, mezcal smoke, and the rich coffee and porter that lingers long on the finish.
Just as the drink doesn’t lose its foam till the last sip, the new Carbon cocktail list leaves a lasting impression.
