Chef James Metcalfe has opened the doors of Saint George, a new wine bar and eatery in Sydney’s CBD.
Located at 822 George Street in Chippendale, in the heart of Broadway and moments from Central Park, the 120 square-metre wine bar and eatery offers a relaxed breakfast hang-out by day and a wine bar by night.
James Metcalfe (previously head chef of Becasse and The Bellevue in Paddington) has designed a menu for Saint George that reflects contemporary flavours with local, seasonal influence.
Specialties include Caramelised pigs head served with spiced pineapple & star anise emulsion; Thirlmere chicken liver parfait, with rhubarb and hazelnut; Smoked Wagyu Brisket hash, fried eggs and house chilli ketchup; and Butter roasted pumpkin, ricotta, capers, sultanas & pine nuts. Additionally, an array of fresh salads and toasted sandwiches are also available throughout the day.
The Saint George drinks menu has over 70 wines are on offer, with a substantial offering sourced from local Australian & New Zealand wine regions.
Architecturally designed by H&E Architects, the interior palette of the ground-floor urban retreat glorifies the historic nature of the building. The deep navy tones that carry throughout the space is lightened by the brass-trimmed features and fused with the exposed walls and original pressed metal ceilings that draw back to its historic roots. The meticulous selection of finishes work towards the realisation of a contemporary space whilst alluding to the behavioural patterns of the original building.
The name is derived from the venue’s central location on George Street whilst also representing a subtle nod to James’ British upbringing.
Saint George seats 45 guests comfortable in the eatery and bar and will be open 7 days from early until late. ‘George’s Garage’, a separate dedicated events space will open next month.
