The final Australian round of the Bacardi Legacy cocktail competition was held last night at The Mint in Sydney with Fred Siggins of Melbourne’s Black Pearl taking out the competition with his Empire of Dreams cocktail.

The drinks were judged by Simon Difford of Diffords Guide, Hayden Lambert of Melbourne’s Bar Americano and previous Bacardi Legacy winner, and Mark Wyatt of Rum Bar Airlie Beach. The cocktails were scored on technical ability, taste and aroma balance and the inspiration behind it.The success marketing campaign for each drink was also judged which included innovative social media work and strong support from both the Australian and international bartending community.
The Empire of Dreams Cocktail
Siggins’ award-winning drink, The Empire of Dreams, was inspired by the art of storytelling and is a refreshing blend of Bacardi Rum, fresh pineapple juice, apricot brandy, fresh lime juice and orgeat syrup shaken over fair trade coffee beans. Throughout the competition, The Empire of Dreams has been lauded for its creativity, originality and potential to emulate Bacardi’s legacy of great drinks.
Other finalists were David Nguyen-Luu from Rockpool Bar & Grill in WA, James Irvine of Hinky Dinks in Sydney, Marco Nunes of Papa Jacks in Brisbane and Niall Maurici from IXL Long Bar in Hobart.
Fred Siggins will compete in the Bacardi Legacy global finals to be held in Moscow on May 8, 2014.
The after party was held at The Cliff Dive in Darlinghurst.
