Dreaming of a tropical holiday this summer but can’t get away? Lost Luau, a tropical, fun-filled pop-up is coming to Sydney’s CBD this summer.
Lost Luau restaurant and bar is a collaboration between Chau Tran and Bryce McDonough of Burrow Bar with ‘Tiki’ Tom Bulmer of Sydney Rum Club. After holding a number of successful rum-fuelled parties and festivals at Burrow Bar, the collaboration was a natural progression for the team to start an endless summer project and keep the rum flowing.
Located at the site previously occupied by York Trading & Co, Lost Luau is set to become a relaxed summer escape. Pineapple incense will be wafting into the street with promises of a beach paradise. There will be blenders, rum, pineapples, umbrellas along with Tiki drinks, a whole lot of fun, good times and banter.
The team is headed by Chau Tran as Venue Manager, Tom Bulmer (ex Ms G’s and Lobo Plantation) as Bar Manager – both will be behind the bar along with a rotating guest bartender every week. Joy Mou (ex Eau de Vie and Monopole) will be Restaurant Manager.
The kitchen by the Island Boys from Marrickville’s Factory Theatre will be headed by Chef Phil Spence whose menu will offer rustic Island bites late into the night with a traditional Caribbean flavour to complement the Tiki pop up menu. Phil’s Jamaican heritage along with his training in London’s Michelin starred restaurants then as Luke Mangan’s sous chef promises to bring authentic flavours.
At Burrow Bar, which is celebrating its second birthday next month, Robby Miersch will be moving into the Venue Manager role and Bryce McDonough will split his time between the two venues.
Lost Luau opens on the first day of summer, Friday December 1 at 4 pm and runs until March 2018.
