Endeavour Tap Rooms, a collaboration between Australian brewer Endeavour Vintage Beer Co and Applejack Hospitality (Bondi Hardware, The Botanist, SoCal, Della Hyde & The Butler) has opened in The Rocks.
Located in an 1800s building that once had Seaman’s, Sydney’s longest-running colonial hotel, the venue was transformed into a contemporary space, whilst paying homage and respect to the building’s classic history, with interiors that are understated and modern, replete with art deco references.
Endeavour Vintage Beer Co. have a philosophy of using all-Australian, seasonally-harvested ingredients with no preservatives and this is their first ever location. Later in February, the venue will house an Australian designed double-stacked 600-litre brew house. Six tanks will also be double stacked and four key lines and four rotating taps serving on-site exclusives will be at the bar.
Expect meet-the-brewer dinners and tours, as well as unique crafty beers that won’t be found anywhere else.
Endeavour Tap Rooms also serve rosé and an Australian Negroni on tap using Four Pillars Gin with a locally sourced wine and seasonal Australian cocktail lists created by Applejack’s Lachy Sturrock.
The food menu by Head Chef Sam Tingle (former sous chef at The Butler) has a focus on a range of smoked produce and is designed to pair with the range of beers on tap. The meats are smoked in a Yoder YS1500 resulting in a lighter version of American BBQ complemented by on-tap beer and ferments, salads and house-made sauces.
